It depends what novelty classes are on at your local show really.

Whinney & Woof - you jump jumps with your horse, dismount and jump them with your dog
Pairs - You and a friend jump a course
Chase me charlie - Jump gets higher each time you clear it
Kick out the can - Jump a row of barrels/cans, 1 gets taken away each time and the last one who doesnt run out or kick the can is the winner.
If I remember anymore Ill tell you. :)

You can get other types of novelty classes too, like:
Most Handsome Gelding
Prettiest Mare
Best 6 legs
Best Mane and tail
Best Thelwell type
Horse most like it's owner etc

Just a word of warning - novelty classes (of the handsome horse variety) are extremely subjective, and based purely on the judge's opinion. There are no criteria for deciding whether a horse is handsome, so unless you are purely doing it for fun, and know you wont be a sore loser if you come bottom of the line in all the novelty classes, go for it.

I once had to deal with a child who had won the "Pony the Judge Would Most Like to Take Home". She thought the judge really was going to take her pony home with him. It took the judge, me, the steward and the child's mother to persuade her that she could keep her pony.

Jockey and Groom - one of you jumps the jumps on the pony and the other runs and jumps them on foot.
Fancy dress
Apart from being fun, novelty classes are a stress-free way of acclimatising your pony to the show ring
