Theres been such sunny warm weather, i decided to chance it and take my horse's rug off and let her get some sun. When i came back to the yard to feed and practice my plaiting (im not very good), she had a chunk of mane about 3 inches missing! There's just nothing there!
I was hoping to have a go at a test in a few weeks time and my friend said she teach me to plait so i could take her plaited.
Is there anything i could do to still plait with a chunk of mane missing?

i guess you mean that the rug has been rubbing him a little over his withers and rubbed the mane away there, don't worry, my horse is the same, he's got one normal plait, then a tiny one with the few strands that are left, then the rest are normal. no one has every noticed. i wouldn't worry if I were you.

its not compulsory to plait & certainly at unaff level there tend to be as many unplaited as plaited , affil most will be plaited
even with a chunk of mane missing you could go ahead & plait , its not a complete disaster;)

My horse has no mane is some areas too  I'm going to try MTG and see what happens. I have heard alot of people saying it works great, but I'm not sure if you can plait or pull the mane while using it...

You can make a false plait if you're feeling creative! If she's got a thick tail, or there's another horse with the same colour hair that wouldn't miss a bit, take a small section out to plait and roll and sew into a ball as a normal plait, then take hair from either side of the missing bit, bring it together over the bald part and sew the false plait on to the band.
But the others are right, it's not compulsary to plait, particularly for lower level dressage.
