for ridden classes you will enter the ring with the other competitors and just ride around at a walk until the judge is ready, generally the judge will ask you to trot and canter as a group, keep to your own space as you go round, if the person in front of you is going too slow turn a circle and join the ride again at the back, then the judge will want to see a canter, and may ask you all to change the rein.
After this you will be asked to line up in the center of the ring and the judge will call you forward one at a time, he/she may then look over your horse, pick up their feet, possibly look your tack (this is mainly for tack and turnout though) and as a few questions about you and your horse, remember to smile and be polite to the judge. Then you will be asked to do your individual show. The judge will want to see you walk trot and canter on both reins, I usually work on a figure of eight pattern then the judge can see you from all angles. Then end your show by halting in front of the judge and give a salute by holding your reins in your left hand and dropping your right hand down whilst nodding your head. Smile and return to your place in the line up.
Once everyone has finished their shows, you will be asked to ride around the ring again and the judge will then pick the winners.
remember to smile and look like your having fun!

As the above, dont forget veterans are not allowed to gallop.

If its affiliated you need to put your horses age on the bridle, I use a dressage number but anything will do. And they mark each part seperately. The give marks for the walk, trot etc seperately so you can see what you need to improve. They also give marks for whether the horses looks like its happy to be there or something. Large proportion of marks for turnout too.

Your tack and turnout should be the same as if you were showing in a normal class. ie a hack would me turned out as a hack, a cob as a cob etc.

Have a look at the Veteran Horse Society website.

If you put up a pic then we can see what sort of horse.

Good luck

Mainly seem to be looking for turnout and condition and freedom of movement but there are some ex show champions now coming through the age groups at top level so they do tend to 'sparkle'. Be careful of some of the specific rules, people have mentioned no gallop, don't even try an extended canter..oh and spurs are usually banned.

As others have said turn horse out according to type, if in doubt stick to hunter turnout, less likely to offend anyone!
