Ok, I'm going to show my ignorance here :o - have seen posts regarding saddles having a 'twist' - could someone explain what that is please? Thanks.

Difficult to explain ... well for me anyway! ... but when you look at a treed saddle, it has a narrowing in the middle. Some treeless saddle seat areas are quite rectangular in shape, rather than having the hourglass shape. So I believe that the twist is the narrowing in the middle of a saddle seat.
However, I'm sure someone on her can probably explain it better than me! ;)

The twist is the place where the seaming in the seat narrows and the seat narrows and is starting to rise up.

basically the more twist makes the saddle feel narrower

This is very true, some treeless saddles have no twist at all and you need to be very open in the hips to get any length of leg in them.
A bit of a twist makes it easier for you to drop your legs long around the horse.
