working hunter saddles are much straighter cut - like a dressage saddle down the front - to show off the horse's shoulder. GP saddles have more knee rolls.

yes, it's fine for both. takes a bit of getting used to to jump in it. but it's very doable.
this is a WH saddle - youcan see it's straight, but has knee rolls under the flap so you can still jump.

i found my old pony's very easy to jump in and extremely comfortable for flatwork :)
