What are peoples opinions of the pros and cons of sheepshin and felt for saddle pads.

By sheepskin, I mean the underneath is sheepskin, such as the Mattes or Lammfelle pads. By felt I mean thick, F10 or F11 grade pads.

I would use a real wool felt over Sheepskin any time.

Sheepskin although a wonderful material, tends to have too much "bounce" when you ride over it causing a lot of movement esp towards the back of your saddle.

Felt holds it shape, pads well and if it's a real wool will wick sweat every bit as well as sheepskin, but without the bounce. Just make sure that you have your saddle fitted over the felt as they did add thickness and will change the fit.
