I love wood fencing! And Polyvinylchloride is nice too (sp?). Dimensions have to be 1 acre minimum per horse.

I don't think there's any particular best dimensions for a paddock - you really have to work around the contours of the land, the boundaries of your property and how your buildings , easements and any natural features such as trees, streams or dams fit in.
Its always nice to have a race to each paddock rather than having to walk through one to get to another. Two gates on different sides of the paddocks can be helpful. Having a small 'sick' paddock can be very helpful - somewhere to put a sick or lame horse to limit its movement (without totally imobilising it) otherwise you just want to split your land into sufficient paddocks to allow rotation - the number will relate to the amount of land you have, the number of horses, the quality of the pasture\ground.
As for good pasture - a good healthy mix of grasses and good weeds (dandelion etc), good drainage, shelter\shade, a rolling area and a loafing pad

It's not the size of the acreage that is so important, but the quality of the land.
ie. if the pature is poor you will need more land per horse.
