I'm not planning on a breeding or anything, this is just a question that I've been thinking about. What would the outcome be if I crossed a Friesian stallion with a piebald Gypsy Vanner mare? I think it would result in a very beautiful foal. :D

Depends on a lot of things; not least the quality of the mare. There's a huge number of less-than-great vanners out there, who have the colour and lots of hair but also have poor quarters, straight shoulders, plain heads and who don't move straight. Finding a decent Gypsy vanner can be very difficult.

The one big problem you'd have is the fact that the vanner is a type, while Friesians will tend to throw the same stamp all the time, vanners often don't. I had a lovely piebald vanner mare who threw three very different types of foal; the mongrel breeding does mean that when breeding vanners it's sometimes a bit of a lottery as to what you get at the end of it.

Assuming that you used a good Friesian (again there are lots of very poor horses around at the moment, sadly) and a good vanner mare who has already proven herself to throw good stock, you may well get something really nice, with great movement and good colour. Worse case scenario is that you end up with a plain, upright, solid-coloured horse with no bum and movement that paddles.
