My mare will work in a really nice outline in walk both in and out of the school, her trot however is a different story! In the school she'll work nicely but lacks enthusiasm, whereas when i school her out hacking ( which is where we do pretty much all our schooling) she tends to get a bit carried away and start rushing off, sometimes she'll also lean on my hands to do so, any advise?

could you be enforcing this with your position: if you expect your horse to play up, she most likely will.
do you lack confidence in yourself or your mare? i believe that some lessons and/or natural horsemanhip groundwork will help remedy this problem, building up both your confidences, responsiveness and trust in each other.

as you walk along quietly, become aware of your breathing - when we are scared or tense, we tend to stop breathing! breathing in deeply through your nose, and out slowly through your mouth wil help you to relax; also consider taking some bach flower remedy oils (especially for your horse.)
it could be that you are tense; make sure you relax each of your muscles, even your tongue, ankles, elbows and jaw.
your horse could be becoming more anxious as she leaves the safety and comfort zone of the yard, her friends, andall that is familiar to her (again, i suggest that you seek expert advice for this)

here is a list of oils that may be most useful for you both: your horse will know which ones she needs.

Aspen - vague fears, sense of impending doom, fearful (to be left alone)
Rescue Remedy - panic, strong anxieties
Larch - lack of self confidence
Impatiens - impatience, irritability, nervous energy, pain
Cerato - inattentive, easily distracted.
Chamomile - calming the emotions, soothing irritable and fractious animals, teething and animal who tend to be restless and cranky.
Clematis - consciousness, focus; post-op
Chestnut Bud - to learn a lesson the first time or break habits.
Chicory - possessive, clingy, manipulative, separation anxiety.
Elm - easily overwhelmed or frazzled.
Hornbeam - mental weariness.
Mustard - depression, gloom, mood swings.
Wild Rose - apathy, passive resignation; to "be here now".
Willow - resentment.
