put the lunge line through the bit from outside in, take it round with the bridle and over the poll, the back round to the other side of the bit and clip it on there, then change it over when you change the rein.
As for not wrapping it round your hand, makes S shapes with it grabbing the middle of the S and not the loops, sorry that isn't helpful

Over the poll will give you slightly more control and I find doesnt pull the bit rings together as much which can be annoying.
Practise with the lunge line at home before actually lunging. Clip the end onto something then let it out and practise winding it back in without wrapping it round your hand. It's worth looking a bit daft lunging without a horse because when there's a horse involved you'll have a lot more to think about all at the same time!
Yeah,.phew, thanks here too Thinking more about the pole thing, if I were to lunge Ellie like that, I think she'd flip I have her in an elevator now because she hates to much pressure there. It might be intresting to try though
