Are there any other ppl who do eventing on this site? Just wondering, b/c I do and I would really like to know.

lol, me too, as you may have already guessed. I have to compete in individual jumping and dressage competitions. Do you have a TB?

When you event, and you don't do all 3 events, do you have to come at the beginning of the show, or do new people come in each day?

Do you mean the riders or the people who watch? When you ride you have to do all three events - that's what it's all about.
Spectators can come go when they like - many only come for a day.

You do have to do the whole thing if you compete, usually there is dressage and X Country on one day, then Show Jumping the next but not always

No, not in an event. But you can enter separate CC and SJ claases on your own that are not in an event.

Really? You have to enter all 3 if you want to enter at least one? Hm... harsh. But can you use more than 1 horse?

If you want to enter an event, that means you compete in ALL three phases. It is harsh, so hors and rider need to be extremely fit. You can only use one horse.
