10 a day is a lot, especially if you want to emphasise the veg rather than the fruit.
We are successfully eating more lightly and adding to our veg count by replacing carbs with veg. For example, Steve fancied sausages for dinner on Thursday, so we had 2 sausages each with a big (delicious) stew of leek, celeriac, cavolo nero (kale) and flageolet beans. Night before was kale, mushroom and chick pea curry. Dishes like that contribute 4 or 5 veg portions on their own and are delicious.
I try to add leafy greens whenever I can. I'm eating leftovers this weekend because Steve is away; today lunch is spinach pie, left over kale & mushroom curry for dinner, left over squash bake for lunch tomorrow. I think I will be doing 10 a day!
We both love carbs - pasta, rice, couscous, potatoes, bread - but these days I try not to make them the main accompaniment more than 2 or 3 times a week. Squash and sweet potatoes are sort of in between - they are high in carbs but their micronutrients make them count as veggies. Plus I still have lots of squash from last summer's crop so they are free!
