Christmas cake - who makes them?

I'm thinking it's about the time of year to start making my Christmas cake!

I endeavoured last year for the first time but I over did it a bit with moving house, the run up to Christmas & lots of other things and it's still sat at home in an airtight container with no marzipan or icing :redcarded: I'll use it as a test bed for the recipe and to practice the marzipan & icing with.

This year I plan on making lots of smaller cakes to give away at presents, as well as a family one for home.

Just wondering who else makes one and what recipe you use?

I'll be making christmas cake this year :)

One with glazed fruits (son has a nut allergy) and one with marzipan etc.

I had a really good recipe last year but can't seem to find it in the house move.

Last year my 9yr old son made another square chriustmas cake too then cut it into four portions and decorated them as mini cakes and gave them to his teachers and family members - worked really well.

That's what I plan to do!!! Much easier than faffing around trying to get the timing of cooking a mini cake right.

Glad I'm on a similar wave length as a 9 year old child - what a smart child he must be :biggrin:

Instead this year i'm going to make christmas cupcakes from my new primrose bakery cook book. The sponge is vanilla with peaches and almonds and they have custard buttercream frosting. Much more appetising :p

i hate christmas cake with a passion!!! my mum always used to make one but no-one ever ate it so she has given up. Instead this year i'm going to make christmas cupcakes from my new primrose bakery cook book. The sponge is vanilla with peaches and almonds and they have custard buttercream frosting. Much more appetising :p

recipe please!!!! not a huge cake fan but have a serious addiction to any sort of butter icing

Preheat oven to GM 4/180. Recipe will make 15 cupcakes.
Cream together 225g unsalted butter and and 225g golden caster sugar. Then beat in 4 large eggs one at a time. Add 1 tsp baking powder, 280g self raising flour, 25g cornflour, 1/4 tsp almond extract and 240g of tinned peaches. Beat the mixture well.

Bake for 25 mins or until a skewer comes out clean. Allow to cool before cutting out a small hole in the top of each cake and adding some raspberry jam.

Custard butter cream-
in a bowl, beat 115g unsalted butter (at room temp), 150g custard powder and 200g icing sugar until smooth. Gradually add the remaining 200g of icing sugar, beating well. Add yellow food colouring if so desired to alter colour.

Ooh I might make one, we were going to do it last year but I costed all the ingredients and it was going to cost a small fortune for something that could potentially go wrong!

My mum makes me one each year :) one day i will have to carry on the tradition but for now i enjoy getting mine made. Will post some piccys later and try and find the recipe

I've cheated this year and did the offer from Tescos to buy a Finest Christmas Pudding and get a 1kg iced christmas cake for a tenner.
