Continental riding school in south of France? Any recommendations

Hi All. I've had some fantastic advice from you guys already. I really want to experience the way they ride in the south of France particularly Camargue. My cousin who will come with me and grew up in that area speaks fluent French and has friends we might be able to stay with. I'm looking for a riding school with fantastic teachers and wonderful horses. I'm prepared to pay more than the usual. I want to experience the continental way of riding but not just hacking out I'm looking for some great teaching too. I can't do a full riding holiday as I have fibromyalgia. About 2 hours riding a day is all I can manage. So probably a lesson in the morning and a hack afternoon or early evening for a long weekend.
I part loan a horse 3 days a week and ride another one day a week. I can ride the basics halt, walk, trot, canter gallop, jumping and cross country absolutely fine but am looking to go a bit deeper and really develop my seat. As I think its that that is holding me back from going on to the next stage of riding.
 
Not sure what you mean by the "continental" way of riding. I worked in France and elsewhere in Europe for 9 years and the majority of people ride normal English or Western style. You do see a lot more Western-style riding and traditional tack etc. in the Camargue if that's what you're thinking of? Though from your comment about wanting to develop your seat I think you are talking more about classical dressage lessons?

I've recommended this place to friends for hacking before and they gave it a great review, especially their gallop on the beach! I think the lessons are just normal riding school style though.

Thank you so much for taking the time to reply. My cousin grew up riding camargue and I think it might be the 'natural horsemanship' she is talking about. They all look great. I'll have a good look at them with her
