Have you tried besom lane in stalybridge? Follow through houses into a track with trees and first buildings you come to (its split either side of the road) is a lovely farm, it's a while since I've been there but YO is lovely and they do diy-assisted-full livery. Winter turnout on rotation and 24/7 summer turnout.

Otherwise there is a farm at the hartshead pike which is do as you please... a farm/riding school off mottram old road and a few in daisy nook - you will need to visit them all though to find spaces
