Either my trusty JVC Everio (one handed) or i have an ATC3K helmet cam that my OH bought me as a pressie . The helmet cams great for when you really need both hands although you have to remember to keep your head as still as possible or you end up with wobbly shots. Takes a while to set it up properly so you know where you look is where it films (if that makes sense) but its very rugged and waterproof (canoeists use them too).
i fumble around with my phone in my hand for a few minutes then start to record, reins like washing lines in one hand, praying they dont spook or buck so i dont drop my phone
only in fields/away from public though not on roads
